cellobiose

A reducing disaccharide composed of two glucose units linked by a β( 1—4) glycosidic bond. It is formed by the incomplete hydrolysis of cellulose by the enzyme cellulase. Complete hydrolysis to glucose units is achieved by the enzyme cellobiase (β-glycosidase).
