stearic acid

An eighteen-carbon saturated fatty acid having the formula CH₃(CH₂)₁₆COOH. Stearic acid is formed by elongation of the smaller palmitic acid. It occurs in many lipids and is also an intermediate in the synthesis of *oleic , *linoleic , and *linolenic acids.
