zymase

The mixture of enzymes, isolated from yeasts, that brings about *alcoholic fermentation. It includes pyruvate decarboxylase, which catalyses the formation of acetaldehyde from pyruvate, and alcohol dehydrogenase, which catalyses the reduction of acetaldehyde to ethanol. It also includes the enzymes of the glycolytic pathway.
