vernalization

The promotion of flowering by exposure of young plants to a cold treatment. For example, the winter varieties of wheat, barley, oats, and rye will normally only flower in early summer if they were sown before the onset of winter. However in areas experiencing very harsh winters, as in the Soviet Union, this may not be possible. The plants are thus given an artificial cold treatment and planted in the spring. See vernalin.
