soft rot

A disease, caused by fungi or bacteria, in which the tissues of the affected parts become soft. Soft rots are most notable as postharvest diseases. Bacteria of the genus Erwinia and fungi of the genus Rhizopus cause soft rots of stored vegetables and fruits - particularly in humid badly ventilated conditions. The tissues become soft as the enzymes from the pathogen break down the cell walls.
