pectic substances

Pectins and related polysaccharides, in which galacturonic acid, galactose, or a derivative of these is a major component. Besides the pectins found in cell walls and middle lamellae, large quantities of pectic substances are found in some fruits, e.g. apples, pears, and citrus fruits. Pectins are used in the food industry as gelling agents in jams, etc.
