mannitol

A common sugar alcohol formed by reduction of the carbonyl group of mannose or fructose to an alcohol. Mannitol is the principal soluble sugar in fungi and lichens and it accumulates in some algae much as sucrose accumulates in vascular plants. Mannitol is a major photosynthetic product in the brown algae, lichens, and some higher plant species.
