Any *hydrolase enzyme involved in the breakdown of storage fats. Lipases catalyse the breakdown of triglycerides into free fatty acids and glycerol. The fatty acids are then further degraded in the β-oxidation cycle. Lipase activity is very high in germinating oil-rich seeds, such as that of the castor bean.
