enzyme technology

The use of isolated purified enzymes as catalysts in industrial processes. The enzymes used are normally extracellular enzymes with no requirements for complex cofactors. Examples are proteases, amylases, cellulases, and lipases extracted from bacterial or yeast cultures. Cell-free enzymes have certain distinct advantages over the use of microorganisms, a major one being that only the desired enzymatic reaction will occur and substrate is not wasted in the formation of unwanted by-products or microbial biomass.
