climacteric

The rise in respiration rate observed in certain fruits during ripening. It can be artificially induced by exposure to low concentrations of *ethylene, a gas evolved by ripening fruit. Ripening can therefore be stimulated by placing unripe fruit alongside ripe fruit. Conditions that prevent the onset of the climacteric (low oxygen and high carbon dioxide concentrations) can be employed during storage to maintain the quality of stored fruit.
