An apparatus that is used to measure the quantity of heat produced when a known amount of carbohydrate, fat, protein, or some mixture of these is burned. It consists of a strong cylindrical steel chamber, resistant to high pressures, surrounded by a jacket containing a known volume of water. The weighed foodstuff is placed in the chamber, oxygen is pumped in under pressure, and the food is ignited electrically. The rise in temperature of the surrounding water gives a measure of the amount of heat generated by the oxidized food.
