anthocyanin

Any of a group of glycoside pigments formed by the addition of sugars and other residues to an anthocyanidin precursor (usually pelargonidin, delphinidin, or cyanidin). A very large number of these pigments have been characterized, all of them either red, blue, or violet. They are sap soluble, and occur in the cell sap of flowers, fruits, stems, and leaves.
