(glyceride) An ester of the alcohol glycerol in which a hydroxyl group is replaced by a fatty acid. Acyl-glycerols are one of the four main types of complex * lipids. Often all three of the glycerol hydroxyl groups are esteri-fied giving a * triacylglycerol. Some di-acylglycerols contain a sugar attached to the unesterified hydroxyl group. These glycosyldiaclyglycerols are commonly termed * glycolipids .
